LINE FOR THE PRODUCTION OF PIZZA CHEESE WITH HOT WATER COOKER STRETCHER

Line for the production of PIZZA CHEESE with different capacity from 150 kg/ h up to 3000 kg / h.
- It is suitable for stretching pasta filata cheeses and pizza cheese with low humidity and long shelf life
- Traditional hot water cooker-stretcher, complete with curd cutter in order to cut the curd in small pieces, hot water preparer and buttermilk discharge vat . This cooker-stretcher can have a double kneading section for high hourly production
- Possibility to put dry salt through a salt metering device mod. LAB 06
- Automatic moulding system with carousel machine equipped by a pre-hardening moulding head for product of rectangular or cylindrical shapes and completely arranged for CIP washing system. Capacity production up to 2.400 Kg/h
- Cooling or Brining line for continuous cooling of mozzarella

LINE FOR THE PRODUCTION OF PIZZA CHEESE WITH STEAM COOKER-STRETCHER

Line for the production of PIZZA CHEESE with different capacity from 80 up to 3.600 kg/ h.
It is suitable for stretching both fresh and industrial block of curd, buffalo curd and for melting powder ingredients such as casein or waste processing for the production of spreadable cheeses.         
Entirely built in Aisi 316 stainless steel, double wall vat for the steam injection into the jacket at 4 Bar.
- Standardization of moisture in the final product
- Easy use of the machine thanks to recipes set in the PLC to control the production ingredients
- Automatic moulding system with carousel machine equipped by a pre-hardening moulding head for product of rectangular or cylindrical shapes and completely arranged for CIP washing system. Capacity production up to 2.400 Kg/h

KASSERY CHEESE – KASHKAVAL PRODUCTION LINE

Line for the production of pasta filata cheese like KASSERY and KASHKAVAL with different capacity from 300 Kg/h up to 1800 kg/ h.

- It is suitable for stretching pasta filata cheeses with low humidity and having a long shelf life and high percentage of salt thanks to steam stretching system
- It is suitable for stretching both fresh and industrial block of curd, sheep curd, powder ingredients
- Entirely built in Aisi 316 stainless steel, double wall vat for the steam injection into the jacket at 4 Bar

ADVANTAGES:
- More output in the final product than the traditional systems by hot water
- There will not be more fatty liquid to be purified as all water added is absorbed by the product during steam stretching
- Standardization of moisture in the final product
