MINI-MOZZARELLA COOLING AND TRANSPORT LINE

Automatic plant for cooling and transportation of mozzarella in small formats, equipped by pipings in stainless steel AISI304, placed in the upper part of the dairy factory in order to avoid problems of space.
The moulding machine mod. LAB 24/40, with an output of 1.000 Kg/h, is connected to a conveyor belt to transport the mozzarella and to make a first “shower-cleaning” in order to remove excess fat at the mozzarella.
The cooling will happen into the pipings by means of cold water.
The length of the pipings will be decided on the production capacity requested.
Connection up to the packaging machine.
Completely arranged to CIP washing system.

MOZZARELLA SPECIAL SHAPES

Automatic moulding machine suitable for moulding mozzarella cheese with special shapes, at your choice.
Entirely built in stainless steel AISI304, it is equipped by a variable-axis machine body and a hopper, at the base of which four augers lightly compress the pasta-filata cheese against a roller which rotates at variable speed and has the impression of the shapes to be obtained with a pre-determinate weight.
The machine is fitted with an electrically-heated jacket to allow the product to be kept constantly at the ideal moulding temperature.
The machine is equipped by a thermo - regulator
The walls in contact with the product are entirely teflon-coated in order to be non-stick.
The construction of the machine allows an immediate visual inspection of each part, as well as the quick and easy washing.
The moulding roller and augers are speed adjustable and are governed by two variable-speed drive motors with INVERTER.

CLEANING CHAMBER

This washing chamber is designed to wash / rinse the transport trolleys and ripening and smoking cheese trolleys.
The washing chamber of our production, in addition to ensuring an effective cleaning, will allows a considerable saving of washing product (detergents) and rinse water.
This cleaning chamber is designed to wash / rinse 1 or 2 trolley per time.
Entirely built in stainless steel AISI 304
It is equipped by:
- entry/exit door for trolleys or it can be manufactured with 2 doors, in such a way that the trolleys do not meet the dirty area with the clean area of the workrooms.
- grilled bottom for cleaning fluid outflow
- washing system with nozzles with high pressure
- door lock tire (for operator safety prevents opening of the door before the lapse of one minute before the end of the wash)
- heat exchanger for heating water by means of steam

CLEANING TUNNEL

The washing tunnel of our production, in addition to ensuring an effective cleaning, it allows a considerable saving of washing product (detergents).
This tunnel is designed to wash / rinse the plastic boxes, racks cheese and wooden planks.
Entirely built in stainless steel AISI304.
Equipped with transportation belt for input and output boxes / boards.
Washing system with nozzles.
Wash water and rinse water separation with recirculation pump.
Detergent dispensing pump
Steam injection heating
Electrical control panel in stainless steel, with all electronic and electric devices.

CUTTING AND WEIGHIN SYSTEM FOR SHREDDED MOZZARELLA AND MOZZARELLA IN CUBES

Automatic line for cutting mozzarella for pizza in CUBES or JULIENNE it is equipe by a feeding conveyor belt for the cutting machine.
Automatic cutting machine to cut the cheese and the mozzarella in slices, strips and cubes.
The centrifugal force generated by the blades pushes the product against the inner surface of the drum. The product meets the knife which cuts a slice. Slice thickness is easily adjusted by turning the handle
Dosing system and electronic scale special version on a belt.
Automatic linear heat-sealing machine suitable for sealing trays through film.

MOULDER FOR HARD AND SEMI-HARD CHEESES

Automatic plant for moulding hard and semi-hard cheeses with round and square shape.
It is equipped by n. 2 or n. 3 independent moulding columns, and they have the function to give the shap and the weight to the curd.
The knives, of the type with sharp blades, avoid the dispersion or loss of the curd. The cleaning of the blades is made by spraying balls.

Feeding of molds
The feeding of (loading) the moulds is made by stainless steel conveyor belt, driven by a gear motor. The conveyor belt is equipped with a positioning system - step by step with a module of 3 molds, for the filling of the molds.

Lower deposit (whey collection channel)
The whey collection channel, is equipped with a filter and a level probe, connected to the pump for whey extraction.
